"Canon" comes from religious terms about what is and isn't Biblical canon (something people have very strong opinions about), so that doesn't surprise me all that much. I'm hardly educated in Shintoism/Buddhism, but from what I understand the myths and teachings are considerably less ironclad and immutable than the Christian ones.
If I'd have to hazard a guess, maybe that's why we Westerners are more concerned about Canonicity? Because it's ingrained in the social subconscious re:Bible? I'm just spitballing, though.

Despite all the globetrotting adventures in recent stuff, they've still done fuck-all with Africa. As far as they're concerned, Africa seems to just be Egypt, a cave in the Sahara, and the vague idea that the etymological root of "Zombie" comes from Nzambi.
South America is also badly represented, but there's actually plans to visit it.
As for their own setting, it's pretty clear that they're using FGO to tie up some loose ends and showcase some of the more unrelated ideas (Wandering Sea, ORT, etc.)
I guess it would be interesting to actually see the Burial Agency, but I suspect that's all stuck in Tsukihime 2 drafts. Despite the memes, I do believe that we'll see Tsuki2 eventually.

For those of Dead Apostle lineage, yes. Although some of the strongest ones such as Nrvnqsr can walk around in sunlight just fine.
True Ancestors are mostly unaffected by sunlight, although they are empowered by the Moon, which usually makes them quite weaker in daytime. The latter is true for Roa as well, who got his power directly from a True Ancestor.
(Note that the Tsukihime main story starts with a crescent moon and ends with a full moon)

Do any of you guys know if the date of Shirou's birthday has been mentioned at some point? I remember Saber working part time to get him a rice cooker or something in CO, but can't remember if the actual date was ever given.
