What is that?
It's not like Kotomine literally dunked Hassan in water and asked him to renounce belief in the devil. ("I fought him, tore off his arm, and just tried to rip your heart out with it; what kind of moronic infidel are you?") The Sacraments of the Holy Church are evidently not quite so straightforward as that.
I think it's useful to think of them in terms of mysteries, and of concepts, those favourite parts of the Nasuverse and of its magecraft. There are ideas behind the plain actions of the Rites, and those can be put to use by the followers of the Holy Church, according to foundation inscribed into the world by the teachings of that Church.

Nasu DOES keep playing the "humanity has the strongest potential" card so base humans sometimes vastly outpowering monsters and magics is not really that much of a surprise there.
Sure on one hand it says that Servants vastly outpower hum humans,but then it also says they were all way stronger back when they were alive and, in most cases, human. Or at least 33% human.
Just waitor notuntil Mahoyo is translated and Soujuurou is added to this mix.
Localizationing stuff
Monstrous Strength in action.Medusa is supposed to be mediocre at melee, but then during that freak out in Hollow it implied she was imitating Dio with steamrollers.
Regardless, it stands to reason she always holds herself back intentionally, but that is her real power. It's just that using her real power is detrimental in her case.
So it should be, "she isn't that good in melee, until she goes YOLO and decides to not hold back and just rips and tears people", not even getting into how skillful fighting with a chain literally blind is at those speeds.
And the whole "humanity is strong" thing isn't so far fetched anyway, since myths are always going on about humans outsmarting or overpowering gods and monsters anyway, so the supernatural is pretty much a measuring stick most of the time, rather than an indisputable rank of power.
