The dude in the labyrinth was a Lamyros, classified as a bloodsucking species. For all intents and purposes "normal" vampires = Dead Apostles.

The DAA are an organization of DA, rather than a vampire "rank". DA is the level of vampire strong enough to make minions of their own. Ghouls are bestial (as opposed to the completely mindless Dead), while Living Dead can barely keep their own sanity in check. Of course, this is standard vampirism. Then there's the crazy stuff that Kiritsugu's father was working on that allowed a vampire who could not even control herself to infect others.
Well Kiritsugu's stuff was just a WIP magecraft means to become a DA, versus a completed version.
I think it's more of the Emiya Magus using the DA essence as a tool to withstand endless acceleration to reach the Root, just like Marisbilly's backup of an Elemental in case human leyshifting is not possible.
And here I thought DA appeared because at that time, there is still the existence of TYPEs. And one TYPE messed up pretty bad the moment that the being picked Earth as a target for its shenanigans.
