Nasu wrote all the old lady jokes and Sakurai wrote all the parts where she’s suicidal
What makes a personality?
I'm sure if we sat down and analysed all her appearances (I don't have her in FGO and I haven't played Link, personally) we could probably come up with a half-dozen personality traits (blunt, aloof, battle maniac), but do those traits really reflect who she is as a person? Are they enough to be able to tell how she might act in any given situation?

Being a supporting character in someone else's (Cú) story means Scáthach's portrayal lives and dies on whether you can make her interesting beyond just her role as the Obi-Wan. Also, the fact that there's very little to her backstory means you have much more room to play about with her characterisation, her history and her potential relationship to Skye/Scotland as a whole.
But alas, so far her potential has been squandered... also she's pretty boring. Which one is the greater sin is up to you.
