One thing you probably shouldn't forget about is that Shiki also plays video games - in particular, he plays fighting games with Arihiko, which makes it strange that Kohaku also plays them, but it also makes it less bizarre that Melty exists. However, once his career kicked off, Takeuchi said some dumb stuff about melty mechanically ('we wanted it to be a simple game like SF, but it turned into a combo game like KoF' - ???????What did he mean by this?). I get the impression that somebody in there liked fighting games, but they were not very good at them at all.
Now, if you're going by the theory that Shiki has always been Takeuchi and Kohaku is Nasu as a young woman, then modern Kohaku will indeed play Soulsborne. If all of videogame jokes in Tsukihime are based on Takeuchi's hobbies, however, then Kohaku will have dropped videogames consoles, and instead picks up a PC, using it for stonks and real estate.
Maybe he meant SF1? That's a super simple game as long as you don't have the original gimmick controller.

I was trying to figure out what makes nasu well "nasu"
I dont think its the worldbuilding per say, nor the concepts (or for both, not all of it)
I feel like its either a mood or way of doing things
The themes or the characters, maybe?
Unity of form and substance. Few writers can truly retain a line of thought between different phases of the creation process, and different layers of storytelling, but he's one. At the end, all the pieces fall into place and you find that everything you've read had its place in the story. Generally when other writers do this, they are being way too literal about everything, but Nasu hits the sweet spot where you only notice it when you think about it years later.
In Hollow he outright gives you a metaphor with the puzzle to spell out that the entirety of the game -including the format- conformed to the theme of sorting things out so that they can be left alone, in other titles it's generally more subtle, like Tsukihime's visuals working in favor of the narrative. KnK epilogue is especially standout in this regard, though.

Really gets you wondering if FGO being made in a platform Nasu expressed to have zero interest before, and this unfamiliarity causing the first 4 chapters to be horrendously below the game's future standards, is supposed to tie in with Cosmos in the Lostbelt's core theme of how being quick to judge can easily lead to disastrous results.
I liked Okeanos. All the pirates were fun, loli and minotaur were cute, and Jason a nice proper prick. London though was a bit dull outside of Mo, which is how I feel about Rome and Nero, too.

I like a lot of the early ones in concept, even if not execution. Of them London was probably my favorite.
I know I bring it up a lot but I do really like the manga adaptation of Orleans; it's not like the early stories were unworkable, they just needed more.
what makes nasu nasu is staple reused characters and themes
Fuyuki is eminently forgettable; Orleans has some good stuff (mostly with the examination of Jeanne d'Arc's legend through Jeanne Alter), but the plot is bland like an early JRPG; Septem has potential, but the whole thing is squandered in the execution; Okeanos' plot is better (and Asterios was a genuinely good character!), but is brought down by the game's structure; and while the plot continues to improve in London, the quick succession of climactic developments in the end is ridiculous.
So not that bad, no, but not really good, either.
