Arach being there for Kohaku definitely feels like the most probable option, especially given how she kinda feels like the mad scientist meme Kohaku of Melty turned into a separate character (and in light of the Satsuki option being fully ruled out instead of simply less likely as I had thought). I'm rather fond of Kohaku as a noncombatant, so I'm somewhat hoping that Arach's assistance takes other forms, but that's just wishful thinking.

I disagree.Different plot sides,Kohaku is on "the mansion"-Arach is on "vampires".Also Arach is a possible ally if things goes south.She saved Shiki at the beginning of the story.
Satsuki will start out weak.She is weaker than Arc>>Akiha>Nero,Arach,Vlov,Ciel>Roa>SHIKI,Noel,Mar io,Saiki.Only Shiki and maids are weaker than her.Also we already know about Arach-Roa-Nero alliance.Satsuki is Roa's child,so she can not disobey him.Her allies options are very limited.
Especially because I kinda suspect that Satsuki's vampire talent has some psychological element to it, which'll probably be central to her characterization. As in, her aptitude for vampirism isn't purely physiological, but includes some quirk of her personality that makes her take to it well.
I say this like I'm not the one who raised the idea of her losing this trait to being with, lol

No, Arach is very clearly on both. She serves perfectly as bridge between them. If anything, her materials profile shows she cares more about Akiha than any vampire.
I'm not a huge fan of Kohaku being a combatant but I trust Nasu's plan.
She is universal ally,she will help almost anyone,but she is one of 27 DAA.Her vampire side is too heavy,despite the "family friend" and "professor" attribute.Also you literally have to choose between her and Kohaku in Near side.Kohaku may be weak,but her core is very strong.Kohaku does not need Arach's help.Akiha,SHIKI,Shiki,Satsuki are completely different stories.
What plan?It is just a speculation and very out of character.

I do vaguely recall there being some background info about Satsuki that shows she's a lot less "normal" than she seems (apart from the vampire thing, obvs)
I do hope her story ends with her becoming a vigilante like she kinda is in Melty Blood tho
Arihiko makes some vague implications when he tells Shiki to stay away from her, too, though there's a lot of things that could be. But then again—
—maybe I'm totally off the mark.
Satsuki being “Normal” is a core aspect of her character but even Normal characters in TM can be a bit weird in certain aspects (Mikiya is probably the poster boy for this).
Take-Moon said that her parents were getting divorced which is something that happens to Normal people but would give her more than just “She had a normal family” as a backstory. In general as well her crush on Shikiller is maybe bordering on Obsessive in some cases, the way she stares at him in some of her Remake scenes is a bit sus. It’s speculative but baring Arc she’s the one who definitely talks about Shikiller the most I think just in average conversation. Plus her Vampire Urges appear to be kinda playing on certain deep seated feelings she had in life. And of course, she has Takeuchi’s trademark dead eyes, never a good sign.
This isn’t to say she’s still not mostly Normal but she probably has at least a little weirdo in her even before the Vampire stuff started fucking with her.
I have to imagine “Normality” will be a big theme in her route, the big scene on Day 2 with Satsuki has Shikiller talk about why he respects Satsuki which has to do with her regular decent morals, and Shikiller’s always trying to get back to his Normal Life. “What truly is ‘Normal’” might be a big talking point. Maybe.
