Was it ever stated somewhere Guda doesn't really discriminate good from evil like normal people do, and that's why s/he can get along so well with Evil-aligned Servants? Or was that just headcanon from some fic?

I think the quote was something like Guda is someone that can write Good with Evil. So they can work with Evil servants because they can use their skills to do some good. Guda is Amanda Waller and Chaleda is Suicide Squad, except the team is already dead.
I visit and post on Tumblr frequently (not daily but close), so my intention wasn't "Tumblr bad" and I apologize if it looked that way. I just find certain attitudes and opinions of a subset of FGO players to be hilariously cringey, and those are everywhere, not just on Tumblr (like the Reddit comic about Kadoc linked earlier shows).
I could have just as well linked to this fanfic, where the author, after having not updated for a while, decided that the best way to update a WAFF/fluff/angst fanfic about a kid Ritsuka finding a family in Chaldea was to write a bashing rant of Kadoc through the mouth of EMIYA of all people. And later doubled down in the comments when people found it bad, insisting that all Crypters are evil and Nasu making Wodime a well-intentioned guy is a retcon.
And since this is a forum, you can see me being one of the people commenting how bad that was.
There's an oddly large (or at least loud) number of people who hate it when antagonists have more to them than just being evil, and that's not just a Fate fandom thing.
Weird to see in a Fate fan though. Gil want to Make Humanity Great Again by infecting everyone with Grail-19, Zouken wants to honour his best friends memory, Twice wants humanity to prosper, Amakusa want's to make everyone immortal. I don't know much about Prototype, but every main villain in Fate is just someone who went way to far and took a turn into crazytown. If you want evil for evil's sake you have to look at minor villains like Gilles or Darnic. I think Kirei's the only one to being a main villain who's evil for the lulz.

Honestly, while Zouken is better explained now, when I first had read only FSN, the whole fallen good man thing did feel kind of like a last-minute tacked on thing, like he needed a sudden sympathetic backstory.
Perhaps the same could've been said of Kotomine but I feel his thoughts had been explored more and in some ways his dickishness felt less like a "Sith Lord cackling" style of dickishness.
If anything that'd rise much less eyebrows now.
Grand Order brought along a world where Artoria as an Alter Nagato Yuki Who Is Also Darth Vader and Medea But a Loli who Grinds Demon Pillars Into Pancakes are things that exist.
Compared to those Carnival Phantasm is grounded as fuck.
There is no mystery to this whatsoever. Everyone likes Ritsuka because Ritsuka is not a character, it's a plot tool to move the story along. Once in a while the writers will throw a few token Stock Main Character Tropes on this shallow husk chugging along and fans will swallow it and start saying things like "See, Ritsuka has personality traits like... Looking good in drag!" (Actual argument I was given once).
It's an exaggeration of a phenomenon that existed long before Grand Order and even Stay Night (not that Stay Night is guilty of it, Shirou is a character made of so many fucking issues. Just pointing this out to remark how old the phenomenon is), that of the Harem Lead who Charms Everyone with Nothing but Generic Kindness and Courage, even though, in the context of any other Fate series, the same character wouldn't even get side glances from the same Servants.
Trying to think otherwise is like splitting your head deciding on what Ritsuka's real gender is. It's all pointless because this is just an empty shell for (You) to step into.
