Besides Arabic apparently, from the same bit in Avalon Le Fae¹ as well as stuff we see in the Melty Blood Back Alley Nightmare manga, Atlas uses hieroglyphics on their magic computers.

¹The translation from the FGO Translation Project seems to have taken liberties with the script tho:

It's translated as if Sion is saying the hieroglyphs are as incomprehensible to her as Arabic, where in the original text she asks "Arabic please", implying she would understand the hieroglyphs better in that language.

You know if we look at historical context around the area the Atlas Institute resided. Their Primary Language being Arabic isn't really that far fetch. In fact in kind of make sense in a historical context
