Gilgamesh is an excellent judge of humans. You don't certainly get someone there on. Even a saint who wanted to save humanity avoided kirei because of his distortion.
It isn't easy to find someone. Meeting him sooner wouldn't do much effect other than him killing and torturing more people

To be fair, Kirei isn't the only bad thing in Caren's life, her mother killed herself to prove a point to her father, and the Church indoctrinated her .
She was born in really bad soil to be frank.
