FGO's set in the present day because it's a somewhat real-time thing, but note that Fate/Stay Night and Tsukihime were also set in their years of release and were "present day". Kara no Kyoukai was also originally released in '98-'99 before being compiled into volumes in '04, so were fairly "present day" as well.
None of these works have rolling dates, not even F/GO - they're all set whenever they're released. If you start F/GO today, they'll talk about the world ending in 2016 (or 2018, for NA players).
The stuff that isn't set in "present day" as of release are the derivative works that directly compare themselves to other works: Fate/Zero's ten years before F/SN, Mahoutsukai no Yoru's in the late 80s because it depicts the youth of an adult character, etc. (Also Fate/Extra's set 20 years into the future, I guess.)
The big question with Tsukihime is whether or not they're going to stick with the original date or shift it forward to 202X, I guess, but to be honest I'm not sure how much would even change? It's a lot less entangled with other works and the timeline seems fairly malleable.
Maybe it'll take place in the year Nasu started writing the remake.
