The oil likes to pop in my face when I put just a bit too much. The egg gets stuck to the pan and tears when there's too little. Even with the right amount of oil, I try dipping the spatula underneath the egg to flip it over and it slides away, pushes away, or just won't go on the spatula all the way.

Messing up that part, the yolk tears a bit and spills out a bit. It's a weird ride-the-bull scenario involving a pan as I try to flip the damn thing over. Once I do get it, sometimes there's a small pool of oil and splashes, again, in my face if within range.

Oil pops when droplets of water get in contact with hot oil. Make sure your pan is well-dried, and the oil should have no problem with popping. Even when you add the egg, which has moisture in it, it should only sizzle and not pop. Heating a pan with oil alone, without anything else in it, should not make it pop, and the amount of oil you add should not have much of a bearing on this as much as stray moisture will.

Typically, it's good to let the oil get hotter before you add the egg, as a too-low temperature will cause the proteins to bond with the metal as it heats up slowly, rather than contract quickly enough to bind(?) with itself. This depends on how pristine you want your eggs, though; e.g. if you want little browning, or a more. Though, this is a case where you would want either a well-seasoned cast-iron or carbon steel pan, or a nonstick. IIRC stainless steel tends to be pretty bad with sticking. Also, it's generally better to err on the side of more oil than less.

No real comment here, other than if you have too much trouble flipping, you could try instead baste the top with oil as you cook, spooning it over. But that depends on how runny or cooked you want the yolk to be.

Though, if you're doing sunny-side up, you shouldn't really be flipping much anyway. Though you could still baste the whites with the oil in the pan to help it set.
