I actually like the David sling "ammo" idea.
It would be an interesting and uncommon case of the legend unintentionally limiting the hero's powers. Also, it would give more weight to knowledge of a hero's legend revealing possible weaknesses, since I don't feel this is actually explored enough even though it's brought up in the canon fairly frequently:
King Arthur - has immortal sheath, awesome sword, will kill you
Heracles - okay, he's kinda crazy sometimes and has a short temper. Which means he'll kill you.
Cuchulain - are you a descendant of Ulster and a wielder of Caladbolg? No? Too bad.
Gilgamesh - "what myth? that? I made the whole thing up for a preschool visit that I graced with my presence"
Medusa - Cool, you have a mirror to avoid petrification. She has a flying laser pegasus bazooka thing.
Alexander - Too bad biological weapons don't work on Servants
Lancelot - haha.
Emiya Shirou - who is this guy again?
Medea - Don't think she'll be seduced twice after that asshole Jason
Francis Drake - She's weak for money but she has BATTLESHIPS
I'd say that, for the most part, knowing a Servant's identity and legend... doesn't really help you. In fact, it could hurt you. I'd say Diarmuid is one of the few that follows that identity thing straight.
I mean, you know Alexander's identity. How's that going to help you? You know that he might have an army or something, but you don't know how it manifests, you don't know what parts of his legend are NPs, etc, etc. And as for weaknesses, what? You're going to... kill Hephaestion again? Tell him that there are no more worlds to conquer?
With Arturia, you can only get under her skin if you know her well enough: bringing up "ooh your knights betrayed you ooh" doesn't cut it unless she's straight up faced with one of them. And also if you're drinking with her and talk about how she sucks at a king. All in all, very specific things.
For Medea, the only example of her getting upended by legendary weakness is when in HF she's trolled offscreen by Zouken.
Cuchulain... well, you could... have a son with him, and then have him kill said son? Really, the only useful thing that comes out of his legend is Gilgamesh knowing that the guy was part divine, then using Enkidu on him.
Throughout the Fate franchise, it's shown pretty well that knowing an enemy's identity and history doesn't help you much unless you're in a luner computer simulation and abide by Moon Rules.

The advantage mostly comes in the form of having a rough idea of the Noble Phantasm, since Noble Phantasms are really the biggest threat that may do you in for good. Knowing the identity of the Heroes does not grant you something you can immediately exploit (since either way you are fighting with what you got at hand)... Unless of course, if you are the KING (or to some extend, the FAKA).

Presumably there's the ability to troll Lancer via geas if you recognise him, but no-one seems to go for that.
