These are depends on your personality. If you feel "Oh, this man/woman is aged/old", you may use "oji-san" or "ossan" for man and you may use "oba-san" for woman. Be careful, these word means "You are old", so if one woman believes "I'm still young", then you will call her "oba-san", you will face tough situation. Maybe you already saw at Japanese manga, some person said(shouted) "I'm not a ojisan/ossan" or "I'm not a obasan" frequently.
