Both times he doesn't actually sword rain, just fights her in melee with randomized weapons.
The only time he actually backs off from melee is in UBW, and by that point she has much better stats than him.

no it doesnt, it says specifically Saber corners Gil repeatedly but gets blocked by his wall of phantasms.

Read the full scene. Only the handles are out of GoB and he takes them in his hands. Only after she backs off and they chat for a little bit do the weapons turn around for the actual sword rain.

Unless Gilgamesh has a NP that produces prana, all the prana he gets is needed for himself. That's why he was eating the souls of children in the church's basement for ten years. I think you are overestimating IA ability to support a servant.A question has been raised that not being a high ranking Mage Gilgamesh would not be able to support summoning a servant. I argue that he is more than suitable enough, Glgameshn possesses a noble Phantasm and in their own right are magic in nature. He is also 2/3 Divine and possessed Immediate Action Rank A (the ability to survive without the aid of a master or mana supply, relying solely on his own Mana) and this should be more than enough to allow for him to call forth a servant. (and arguably allow his servant self to survive even if his own mana is not enough.
In the end I agree with You. He could, maybe, but there's no reason for him to do so.
Technically he just nommed on those orphans to make Kirei happy;he didnt actually need the prana, since he has a real body due to beeing incarnated. Which means he technically isnt a servant anymore by that time.Though id say if he could summon a servant, he wouldve already tried to summon Saber or Enkidu for more personal reasons.

Maybe the real reason Gilgamesh can't speak the name anymore is because he found out that the entire universe, including himself, spelled it wrong and boy was that embarassing.
