It also explains why the fight got more explosive as it went on. Saber started off "small" by simply bisecting Herk. Then the excaliblasts escalated until the really big one.

That was also a thing in fate classic, just most people tended to ignore it because they hate how nasu likes to break his own rules

I was talking about in the graveyard fight you brought up. Saber beating him up there is in the VN itself.
She never did any sort of damage to him in the VN, there was just Shirou narrating about how Saber could get her chance to win (even when he didn't know about how God Hand work at that moment). And when she tried to hit him directly in the Fate route, she couldn't bypass that protection
Actually shirou worked out significant details of the godhand after watching archer’s attacks be nullified. An easy to miss moment occurs when shirou realizes that a law of immortality is protecting berserker from harm after archer’s arrows prove innefective.
This does not occur in the fate route as archer was not present in the fight. This is one of those times where shirou is able to intuit significant details many other people miss, such as when he seduced Gil’s identity earning what passes for a compliment from the king of heroes.
EDIT: also, it’s not “a chance to win”. Both shirou and rin are confident berserker can’t beat her now.
