I generally enjoyed Olympus as well, I think it's prose was much more enjoyable than Atlantis but the companions in that one were stronger. Some high highs (Aphrodite scene, Adele and Macarios' conclusions) with some low lows (Jesus Christ, stop telling me about how big dick powerful Zeus is, I get it!!!)
I'm planning on rereading Olympus soon for the first time since around when it dropped on my NA account, feel like I'm going to end up hating it more than I currently do lol
My brain seems to only remember the Wodime/general crypter content and it being some of my favorite stuff in Fate (aside from Beryl, the blackhole of writing he is) in any detail, to the point I own merch of the guy, and I've blocked out a lot of the, er, earlier stuff that I remember to be kind of dog shit like the AI squad or the way Musashi was way overused to the point of overshadowing the newer characters like Caenis.
Literally no idea if a reread will make me like those scenes more or if I'll remember why I did not like them lol
They don't really have a ton of competition tbh, it doesn't really feel like there's a companion Lostbelt resident from 2-4, just some residents you meet a few times

I feel like it gets a bit more complicated with LB6 considering how large the cast is in general, the way the story is told, and also the fact that ALL of the playables from it are initially from the Lostbelt when normally that isn't the case
I swear the more I hear complaints about Musashi the less I understand them. Not because I like her (I'm indifferent with the Shimosa manga making her dynamic more enjoyable for me thanks the expressions) but because I legitimately do not understand what in everything she does is so particularly stand out to the point of annoyance that any other ally servant doesn't do themself.
Recollection of her in Shimosa is worse than it should be due to people conflating gameplay (forced musashi support fights) with story, she's frequently recurring which makes it easier for people to latch on their hate of her because they keep being reminded about her as opposed to other chapters where they just forget about them after reading, she is often written by Sakurai the fate boogeyman story reaper, the chaos stuff had no proper in-chapter buildup (despite nasu saying he planned for it super early??) which makes it really easy to latch on to as well.
Not saying I don't dislike her, but for me it's more because while I think she works well on a thematic level, she still needs to appear in story to act as a thematic vehicle, and usually when that happens it's done with pretty weak execution. Still, there's no doubt in my mind that the above reasons (in addition to many many others) are some reasons why people inflate their hate for her character and then just let it propagate without any actual reflection on the matter. Basically it mostly feels like the same thing as with Sakurai, just concentrated to a single character instead of a writer.
This feels...not right at all, unless I'm sorely misremembering. Caenis had great parts in general (across all of LB5 even), with a lot of character building and getting to show off why she's cool and a good character. If anything, it would be more appropriate to say that Musashi is underused, because while she hangs around a lot and acts as battle support, she's not effectively used in terms of dealing with the plot, and obviously the buildup towards the end is practically entirely lacking. For the sake of execution Musashi should've been used way more (and by more I of course mean differently moreso than just increased screentime), in my opinion.
I never particularly hated Musashi as she was fine in Shimousa and despite pulling a GG3 at the end of it, it was an ok chapter.
Her showing up in LB1 did felt kinda forced as the rest of the characters had something to do or had thematic ties to it, she was just kinda there. Olympus was worse in general because the start of Atlantis tells you she's gonna die in Olympus and that basically puts her character in stasis for all of Olympus until the Chaos part. You can tell they try to recreate that road trip feel of travelling with her in Shimousa, but it just kinda feels like trying to sell you again on a character that a previous story chapter already did (Unless this is made to account that players may not read Shimousa when doing Part 2) which does lead to moments like Musashi doing a whole speech about morality and freedom while being on Big Brother Zeus's city despite being told Zeus can hear any form of spoken dissent.
I didn't like the island hopping in Atlantis. You could have cut out or shortened a lot of that.

I actually like her plenty in Shimousa, and generally enjoy it as a whole save for a few small issues, unlike most people. I also like her LB1 appearance even though I know a fair amount of people who don't.
I remember 5.2 having her just... feel like she didn't really have a reason to be there, so I remember being annoyed that she was taking away potential screentime/dialogue from other characters, but like you said most of the time she doesn't feel like she's even being utilized in a meaningful way. Add to that they have her take out a super boss for what FEELS like the sake of getting her off-screen so people can't ask "why didn't Musashi do (x)" during the final fight, I think my feeling that she overshadows others is probably due to THE infamous scene having a severe lack of buildup and feeling like she simply did not need to be present when we could've had a bit of elevation for someone like Grand Roma, for example, a brand new character that I feel shot and missed in his debut appearance due to poor utilization.

I don't WANT to hate her, but she's just... pushed too much. It's no one thing (well, the entire Chaos scene was the culmination of all the wanking she had and then some) but lots of little things that add up. All the other ally Servants are, explicitly or implicitly, just "along for the ride", typically following Guda/Chaldea's lead. Musashi is made out as though she's a part of Chaldea, like she's always been with everyone, and that's a position she never earned.
