Do those mythological characters have the classifications to fit into the those classes? To my knowledge, Yoshitsune was known for swordsmanship, and while I'd guess materials about him are limited in English, I'd think he'd be chosen more for the Saber class. Shielder on the other hand is also hard to determine since we don't know the qualifications for it. Yeah we could throw this out due to exceptions of the Hero's own ability, but not every hero has what Nero does...because Nero is awesome...or at least Fate's Nero is awesome...not too sure about that other guy.
I think Shielders use shields.

Kind of wish they did, with Nero and Artoria, it was fun, guys getting genderflipped to women (even if the original reason was so we could have a male protagonist lead rather than a female one). Now it's getting out of hand. I love women as much as the next straight man, but not every character needs to get gender flipped. Though I will say it worked for Extra Rider as badass pirate women are the shiznite (and she may not be Francis Drake after all)

Didn't someone else do that the beginning of the Sengoku Era? I believe it was Nobunaga who led a Calvary charge in to a canyon that scared the crap at out of Yoshimoto Imagawa's men at Okehazama...though either way, it means they were both Cavalry Generals, which I guess makes the requirements for Rider.
Let us not forget, in the cases of all 3 Servants ((Shielder, Saber, and Rider)), that Type-MOON has taken quite a lot of liberty in their ability to write these characters. So for all we know, Rider's true historic/mythic/legendary figure never had a brother or a white horse, or Shielder's Shield could be a manifestation of their defense of their nation. Or something along those lines. Not to say we can't theorize, that's half the fun. Just remember to keep in mind that many of the pieces we have could be forged pieces placed their by the Puzzle Makers.
