They both provide certain setups that can't be done (as easily) with other Servants. Void is basically a wave-clear Servant while still being able to handle fights well on her own without NP. Assassin Shiki is a straight up single-target beat-down with ultra slim chance to end the battle faster. Still not great but it works. And she ignores more things (Invincibility) than Sasaki.

Buster: Kintoki, Tamamo Cat, Nobunaga.

Yeah. I skipped him too actually in the planning phase. In fact, I actually had the whole 'Team Japan' done up since Honnouji. Without Kintoki or either Tamamo in there. And obviously without Shiki/Void.

I've worn it during every event since it was available.
When you're chowing down on apples while you grind, the levels go by pretty quickly.
Also, IIRC Saber outfit actually levels faster than the Atlas/Clocktower/plugsuit ones
