Well, as I understand it... a lot of the foods that were traditionally verboten in Abrahamic cultures are things that would have been difficult to prepare in a safe manner for Bronze Age peoples. Things that require special cleaning procedures or particular expertise in butchering (beyond the already somewhat exacting rituals), or would have been likely to absorb environmental toxins.

That said, the veracity of this claim isn't something I've looked into deeply.

Oh I dunno... We still get botulism from tainted canned meat products... People ded or near ded with lifechanging consequences from improperly cooked pork... a lot of youz countries don't dare eat raw or undercooked eggs for salmonella

Why is this even really a meat/vegan debate. AfaIk, there was no confirmation that the disease came from eating a bat anyway. There's a number of ways people could have come in contact with a diseased animal, be it food, as a pet, medical or other scientific research, even just a wild animal encounter. Eating is most likely, yeah. Probably improperly prepared. Or maybe just being exposed to the infected animal kept in a cage, but remember that the disease can live for a day or more on surfaces. Initial exposure may not have even involved direct contact with the diseased animal...

Jokes aside, pretty much the only way to completely eliminate all chance of possible viral outbreak.
Improper irrigation from nearby farms can give your lettuce some nasties too, wouldn't even have to eat any meat.
