I actually wouldn't mind more Aoko, if only because Touko has already had her showings in KnK, various little cameos/mentions in Fate stuff, has several volumes involving her in Case Files, and so on.
Aoko, I wouldn't mind seeing some more of her and her travels.
That would actually require TM to get off their butts and make Mahoyo 2 and 3.

I mean, Sunny Days is a thing. He still has a crush on Saber in UBW, it's just that because of her being stolen away by Medea he doesn't get a chance to connect with her, (mentally and physically hur hur hur) as much as he does in Fate. On the contrary, after both he and Rin are left without Servants, they actually get close enough to move past "mutual crush that neither actually expressed because of factors".
Really, all 3 of the romances in F/SN are 'for want of a nail' kind of situations.
