I'd personally try to be part of the 20 odd members of Chaldea staff that survives. That way I'd be not that important in the overall plot but still be able to experience weird shit. It also allow me to access Shiva so i can be able to fully marathon the entirety of human myth and history.

Assuming I'm just myself without any new magic powers or what-not, not truly sure that I could do all that much differently. If my normie self just tried to walk up to the Mage's Association and knock on their door I'd likely end up memory-wiped or even killed for my trouble.
I'd probably go with IceBlade's suggestion of being one of the surviving Chaldeas recruits, since that's pretty much the only way I could get involved with all the Nasuverse craziness while still being a (mostly) normal person.
