Herc is pretty much meant to be a cheat if Gil wasn't around. It's tough to find other examples tbh, since after FSN, no HGW follows standard seven classes battle royale format.

I did briefly consider Herc, but then I remembered that he goes down in the Fate route before we even learn that Gilgamesh is a guy.

So it's been put to paper that Gilgamesh would have solo'd all of the Fourth Grail War at once if he was let loose while they were all teaming up on him at once.

Are there any other Grail Wars we've seen where a similar situation could have arisen with a single opponent winning the 6v1 matchup?

It’s not stated he could be them all at once, only he could win in a single night. Keep in mind this doesn’t even require beating the servants as you could just aim for their Master.

6 servants is a ridiculous amount. There likely isn’t a single regular servant that could achieve that.
