A lot of my favorites come from Apo, it's just the story they were in was lackluster. Not even bad really, just lackluster, and it still had its moments. That's more than I can say for Extra, imo.

I always like contrasting Apo and Zero because Zero takes a thematic cue from F/SN to expand on the idea. Stylistically the whole CRAWLING aura that is attached to any Urobuchi work obviously kinda hurts it for people used to more optimistic Fate stories but it's a solid expansion of an idea connected to the central theme of SN (Shirou's ideal, and in Zero's case Kiritsugu's fucked up original one that ties neatly into it)
Apo is trying to do SN again to the point of having more analogues of its characters than Extra, but fails in execution because of the factors that make it distinct. In the end it literally just is FSN but worse because it never aspired to be anything but an FSN remix.

Those are the exception though, not the norm.
I think it has more to do with the fact Nasu's mostly tackling Eastern philosophy, with elements that are heavily rooted in buddhism such as the Taiji, topics that the vast majority of his audience aren't really familiar with (even more so outside of Japan/Asia). That with his tendency to combine those elements with things such as theology and thick magic-babble aka what I would refer to as "Nasuism", it's not surprising that only folks who are both knowledgeable in Buddhism and with a PhD in Nasuverse jargon are fully able to grasp what he's really talking about.
To his credit, there are cases where it all works out wonderfully such as in Paradox Spiral. But then you also have moments where the execution is so laughably heavy handed, to the point its beat over your head for near 3 episodes straight. Though the latter is mostly egregious in the anime, thanks to Miura being a complete hack of a director.
Hot Take:
Zero would be so much better if the great majority of its characters were cut, or at the very least revamped wholly from the ground up, and a lot of the "side" portions of Zero such as Kariya's story and Sola's whole batshit thing are the worst parts overall of the whole thing.

The memetic perception of Boukyaku Rokuon Guy as the antichrist is probably the most successful holdover from the amateur philosophers/sakuga experts/media critics who were too big-brained to enjoy UBW when it was airing.
See the problem isn't that there were too many people. The problem is that these people had very bad plots that often served no real purpose whatsoever except add to the grimdurrk and occupy screentime that could've been used for something more relevant.
Like, it might be a better way to put it if I say that Uro really needed an editor to look over his shoulder and go "Okay the plot of these characters adds nothing and makes them unappealing as fuck. Maybe you should go back to the drawing board and try to come up with something better."

Nomura is notorious? I barely know much about him except her made kingdom hearts of which I've only read the manga

He's decent looking least. Though that may just be because he didn't have much competition in Apo- Karna is in his own level of prettiness but I never liked Chiron for his looks and Amakasu is okay I guess. Though I may just be biased against Konoe's art
