So I had a look in at the wiki (sacrilege, I know) and it said in the Apocrypha timeline the 3rd Fuyuki war took place in August of '39, so assuming that's correct, does that not mean the 3rd war in Redline took place out of sync with the main timeline in '43, as to my understanding that part of Apocrypha is still in line with FSN?

There's nothing indicating that Fuyuki exists in the Redline universe.

Well I know that, but both wars were the third grail war of that world. In FSN the Einzbern summoned Avenger, in Apo they summoned Ruler, I'm just wondering then if the time gap of the war created the cascade that diverged into Redline.
Fuyuki specifically, not as such, but that this war is clearly derived from what we could call the Fuyuki ritual seems pretty clear since your Church man references the Three Families in chapter 2.

While not entirely coherent even with Fate/Koha-Ace, the first Koha-Ace mats in EX mention that Nobu stole the Greater Grail of Fuyuki. It says it chronologically takes place in the same timeframe as the 3HGW, comparing it to something like the opposite of Apocrypha. Though it seems to explicitly clarify that it's not actually the 3HGW of the main timeline despite that.

It's a little weird getting used to a serious Nobu after being for the most part a joke character in most of the type moon works. It's rather nice though I always thought she (and Okita lol) had a lot of potential to be better developed if given the chance.
Makes me wonder how they're gonna handle the upcoming fight with Berserker? Cause the only reason Nobu didn't drop in and gank everything in the original was she didn't want to confront Nagayoshi. I can't imagine serious Nobu is going to have the same predilection. I mean I guess they could make it just that she doesn't want to spoil his game or generally has no interest in saving the Magecraft Division from a beast of their own making, but I'm still curious to see how it will play out.
