I don't like Tsukihime very much. There are some emotional high points, but the writing it's just too dry, the routes are too repetitive, and the characters are too flat and stereotyped. It's just whatever.

Tsukihime for the most part is suited toward a more personal thriller type story. One and done, but entertaining for the ride, the remake unless sufficiently rewritten for some parts, doesn't seem like it will change that. Maybe having Satsuki's route and that new character from the church will open additional avenues.
None of the characters are really chomping at the bit to go out and meet other people, and any overarching plot threads would be saved for the sequel(if it ever gets made), focusing on Shiki and Arc with some Ciel, what about Akiha and the twins? Footnotes likely, which would be sad.
Fate is made to link many different stories and span multiple side stories, which equals chances for additional cash flow. Like it or hate it, it gives more opportunities for usage of more characters.
You might've had a point if most Fate stories weren't just lukewarm alternative universe variants of the template. It's not that Fate verse lends itself to interconnected stories and side stories, its that Fate is an easy to use copy+paste template.
