Romani-waifu vs Speedowaifu?
Type-Moon has a lot of waifus. I mean a lot. And many of them are great. Many are shit, but that still leaves a lot that are pretty good. So it's hard to pick which one I definitely like the most. So I think I'll just name some I'd like and tell why. I am assuming vaguely Hollow Ataraxia / Kagetsu Tohya type of setting: There is no great struggle to win, only slice of life hijinks.
Saber - She's cute and strong and hungry. Bullying her is fun, and danger only makes this more exciting. Granted, she is a total freeloader, so that works against her.
Rin - A typical tsundere to be fair, but one that actually has well developed dere. Her being member of mage association and genuine believer in their cause works against her, because fuck those guys.
Sakura - A lovely housewife. Lewd too. Nice. Her scary side is actually perfectly manageable. When she's mad, fuck her and she'll forget what she was angry about.
Arcueid - She's cute and strong and fun. Could be annoying at times, but her characterisation shown that if she's in love with you can put her in her place by placing foot down.
Ciel - For an assassin from fanatical shadowy cabal, a surprisingly safe love interest. All around vanilla devoted girlfriend experience.
Tamamo - She's evil, true, but lets be honest, all women are. Her wife power is top notch.
Medusa - She's cute and strong and speaks softly even when she's killing you. I love the contrast between her amazonian figure and her being quiet reader type.
Honestly I might've skipped close to half from the list I'd be totally okay with. And that's only those from the list.
Medea would be great for dates as well I think. Especially since she's so...wifey.
