Her appearance in FSF describes her as being in her early 20s which means at the least that she starts aging again at some point (or it's another FSF world is weird thing).

Started Legend of the Galactic Heroes (14/07/23), pray for me.
The rare illness "being in Case Files" is actually not easily cured. I hear that the symptoms were treated by being put in FGOtherapy, but that, much like chemotherapy, does almost as much damage as the original illness. Sadly, there is no winning for her.
Had to choose the boring option as it is the one that most closely resembles my reasoning.
Gray "made a name for herself" almost entirely on the back of being a Saberface. It's not just that she's "too marketable", it's that "being a Saberface" is almost the bedrock of what we know as "Gray".

Honestly, what is Gray even mad about? Roughly 1/3 of all people to have ever lived are Saberfaces, at least she has a different hair Colour.
Speaking of which Gray, if being a Saberface is sooo awful, why do you style your hair like her? What, did Rhon braid your hair into a bun too?
Voted the yes option, because I'm going to try and be optimistic about this, DDD and Tsukihime 2. A foolish endeavor to be sure, but I might as well try to believe something like that will happen. I'd also take an Angel Notes short movie.
That being said you raise a good point and the true answer is probably the second one and she actually just likes King Arthur that much, it's the only thing that can explain why she'd chose such a specific hairstyle. Either that or Tusia's old image of the ahoge being a I think parasite like thing that is controlling Saber (and now Gray) forcing her make it into a bun. So between those I think actually liking King Arthur is more likely.
Maybe she styles her hair that way as a tribute to the person who saved her life by pushing her stuck car out of a snowbank a decade ago?

If Gray was half as punk as she dressed she'd get a tongue piercing or something.
I could've sworn they addressed that in the novel, she literally cannot change her hairstyle as it morphs back into artoria
I don't remember if it's been addressed but I wouldn't be surprised if it just magically styles itself
