On the subject of Maltheim, something I've picked up on that people are ignoring is the fact that he has a second servant alongside his Japanese Saber. It strikes me off as important since she's on the bottom of Volume 1's cover, so I have my theories.

I think we're probably safe to assume that Foreigner and Mooncancer are off the table just because of their very specific credentials.
Alter-Ego and Pretender are likewise quite weird classes, but somewhat more achievable so marginally more probable.
Shielder, seems like a story filled with valkyrie shield maidens and such would be a perfect place for our second official Shielder, I'm doubtful they'll pull the pin on this one.
Ruler would seem like a safe bet for somebody trying to stack their odds since they come with true name discernment and command spells, but also aren't supposed to be interested in the grail themselves and it seems likely in this tournament style Association sponsored war, they might've found a way to lock out such an advantageous class.
Avenger is the one I'm betting on personally. Assuming the leading theory is correct, the legend of that hero would lead me to believe this is the best class for them and also creates a very good opposition to Aslaug and Ragnar.

It's similar but the undershirt is different, and no tie. The suit looks the same though.
Fuck now that you mentioned it, yeah it should totally be Shielder as the 8th class, but I have a feeling it won't be.
Yeah, i'm also betting on Shielder but i know Sakurai will either use some uber specific class or just make up a new one
If you think about it, Sakurai is the only one of the writers who hasn't done an original extra class yet:
Nasu: Avenger, Alter Ego, Moon Cancer, Saver, Shielder, Pretender, Ruler (Apo MMO), Beast (Proto PV)
Higashide: Ruler (Apo LN), Gunner (He will keep insisting on this one until he can actually make it a reality)
Narita: Watcher, Gatekeeper
Sanda: Faker
Meteo: Voyager, Foreigner
Sakurai: She has Beast VI on Fragments but technically the concept was Nasu's...

Tbh, I can't neither remember nor find the source for that. Not saying it isn't, but the first mention of the Gatekeeper class I can remember coming across is Watcher's summon scene.
If someone knows the source for it, please share it.

The idea of misleading the player into thinking Gil might be future Shirou only for Archer to be instead could've been interesting.
Imagine Rin, Shirou and Saber discussing Gilgamesh being future Shirou while Archer is in the room like: Yeah let's kill him to paradox him out of existence haha
