Hopefully saying this doesn't come back to bite me, but this looks refreshingly straightforward. After all the wildly exceptional grail wars of the extraverse and FGO, it'll be nice to have one closer to the original. I'm sure they'll raise the stakes later, but just wandering around town doing SoL stuff with your servant will be a nice change of pace.
They did share a tender look with each other at a point in the leaked trailer. So either that, or it's some intense bromance like Sieg and Astolfo could have been.
His art does look older than the model but I still definitely feel like they adjusted his age.

Hard to tell but given that the players are forced to play as a male protagonist and growing your bond with Saber is an entire gameplay mechanic I am going to assume that there is like a 99.9% chance Saber's a girl because there is no way they're going to give us a gay romance (or even anything that resembles one), especially given this franchise's track record.
