From what I have read online I think I more or less have a grasp on who wrote what, but theres still no actual explicit source I can find that outright says which author wrote what. IDK if its just common knowledge around here, but it would still be nice to have it all listed out so everyone is on the right page

There are various tells for who wrote a chapter: there are writing styles (Comun has a good writeup of this somewhere that I don't have a link to), there are characters they tend to frequently reuse (see Sakurai and her Japan gang), character designer credit is a big one that's usually right (when we get mats and 90% of characters from a chapter are made by the same person, we can usually assume it's that person writing the chapter), and then there are cases like when they accidentally almost outright say they've written the chapter on Twitter, or like with Nasu who we're always told in advance when he writes. For events you can usually guess but I don't think anyone's keep track for the most part.
We also know from interviews and stuff that Nasu also writes the "major lore things" and also "parts spanning multiple chapters", which means for anything like a Beast appearance you can assume Nasu wrote that part (or for similar scale in lore, I guess), Crypters, major character appearances across multiple chapters (like Caenis), and then we also know that for Lostbelts he writes the prologues (before you enter the Lostbelt) and everything from "beating the king until the end", I believe.
That said, the agreed upon list by this point I'm pretty sure is:

London: Sakurai (presumably with Nasu for the Goetia part)

Camelot: Nasu (with Sakurai for the Egypt parts among other things)

Tunguska: Sakurai (with Nasu for the big parts, presumably?)
Traum: Higashide (with Nasu at the end)

That's what people thought at first, until mats came out and whoops, all Meteo characters.
Useless tmdict is wrong all characters who debuted in Atlantis were written either by Higashide or Sakurai.

Plus Meteo has a very distinctive writing style, and Atlantis doesn't feel like him at all. It's much more Higashide, with a bunch of characters, big epic stakes, etc.

Yeah I recalled Atlantis being Meteo was assumed because he made Circe and thus was assumed to have made Odysseus (he did not), but it’s really mostly Higashide character (and sure feels like it too)

Double checked and Super Orion, Mandricardo, Charlotte, Jason, and Paris are all Higashide characters. I don't see any that are Meteo. So yeah.
I meant to put Atantis = Higashide, yeah, I just had a temporary loss of intelligence and presumably just got caught up in thinking "it wasn't Meteo after all" and then I wrote down Meteo.
Part 1 had full disclosure of who wrote what. This stopped being a thing because the internet wouldn't stop bullying Sakurai over Septem. Starting with EoR, event, and chapter announcements would reveal who did it if it was Nasu or a guest writer, but Higashide's, Sakurai's, Minase's, Meteo's, and OKSG's works are anonymous. Gudaguda event streams also don't mention the writer is Keikenchi, but I'm not sure if that's a case of anonymity or not.
Anyway, who wrote what is discovered by pattern recognition and because Fate/Grand Order Material never stopped revealing the character creators for every Servant. Then two months ago, Meteo announced he did Salem, which is a surprise to literally no one, but we didn't know he could just publically say that. Higashide also got too proud of Paradise Lake and tweeted that this one was his. He later mentioned doing Atlantis, which ties with a Famitsu statement that Aeaea was made the Atlantis writer. In summary, everything here is my speculation unless stated otherwise.
The event commentary section in Famitsu is a major source of speculation material and confirmations here, you can my translation of those comments separated in blocks covering from Csejte Pyramid to Oo'oku, Las Vegas to Requiem, Paradise Lake to Turtle Island, Traum to Takasugi's White Day, Lilim Harlot to Mystic Eyes Symphony, and Luluhawa 2 to Nagasaki.

From memory, I actually don't feel like either of the Caren-involved valentines were particularly Meteo feeling. The Bazett one I actually suspect was written by Nasu in its entirety, while the Caren introduction one is more up in air. There are hints of it feeling kinda like Minase, but it's hard to tell.
