Thoughts on my own list now we have more details about how it'll happen:
Saber: Charlie or Munenori if I finally talk myself into grailing him.
Archer: Moriarty unless I throw more Grails at EMIYA in which case it'll be a coin toss.
Lancer: Eresh or S.Ryoma or Don Quichotte will have to fight for it.
Rider: Iskandar, that much hasn't changed.
Assassin: Gramps because there is only one Grand Assassin.
Berserker: Only Kintoki qualifies for now, I'll see if I talk myself in grailing Herk or Sono-G.
Caster: Hardest one by far. Mebbe Sanzang for services rendered? Otherwise Circe or Medea.
Extra I: Maho Nobbu.
Extra II: Voyvoy.

I would probably roll up with an all Altria Grand list, but then they decided to add too many characters I like.
