I never understood the appeal of watching others play videogames.

I mean sports, sure, you need a team, or a special field, or equipment, and usually all of the above. But in the same time as watching someone else play I could be playing myself and that's usually more fun.

When I watch let's plays, it's usually more for the personality of the player than the gameplay. It's no different than listening to a podcast.
Besides that, it's entertaining to listen to other people's impressions of things you like. I've watched like seven 999 let's plays by now (not all in their entirety though), and it's entertaining every time. I imagine that's also the reason people watch those reaction channels.

but watching pewdiepie / markiplier / someone else playing it? sure, even if i shit my pants from jumpscares, it's fun

There is, it's called Real Life. There's plagues, Nazi's, totalitarian Communists, a huge amount of NPC's, and great world building. It's also hard locked at 60FPS, but resolution varies depending on individual hardware.

Gameplay sucks tho, and the classes and starting servers are very unbalanced.

Yeah, but that's AAA. Sacrifice gameplay and plot for impressive visuals and a huge map.

For that there's trailers and reviews and gameplay videos though.

Trailers are p awful for actually showing what the game is like, rather stapling up cool moments, most of which being cutscenes
Reviews... are hard to trust given certain games, as I'm sure you know
And not too long ago there was a 'gameplay video' that had a whole of 12 seconds of actual gameplay
