Honorable mentions go to Arika and Soujurou, I haven't read much of their respective works but I've liked them in what I have read.
Well, to be honest, when I initially started reading Tsukihime I disliked Hisui, as she seemed to be of the "Emotionless Doll" character archetype and I'm not really a fan of those unless they have a good story and good development under their belts. Thankfully, Hisui's got both of these covered, in my opinion, at least.
I liked how she remained loyal to Shiki no matter the situation, while all of the other girls have tried to kill him at some point.
I also just generally loved the story behind her, when I found out that she was the girl who used to play with the Shiki's and Akiha all the time, while Kohaku was the girl by the window, my jaw literally dropped.
I know I probably should have, but I didn't see that coming at all.
There's also the fact that in both endings, she shows signs of becoming like her old self and in one, she's rebuilding her relationship with "Nanaya".
While it's generally Hisui's story that makes me love her as a character, I have to admit, even when the spotlight isn't really on her she had some great moments, such as the falling asleep during Shiki's Welcome Party.
One last thing, just about any Kagetsu Tohya scene with her was pure gold, from a comedic standpoint.

Physically, she has edgy white hair and that slutty strip-gown-thing.

In the VN itself, her tentacle-dress just looked like black nightgown, it only got slutty after U/C showed that its skintight and made out of thin movable tentacles.
I wonder if that dress is warm to the touch.
