What are you talking about? Ballet alone has at least 10, if not definitely more with how long its existed and how long it has had institutions and such to teach it. Not to mention tap dancers of vaudeville, Broadway and Hollywood, or the various pioneers of modern dance.

If it helps I had one idea immediately. Dunno if you'll like it but it should fit the prompt. It is definitely dancing and it definitely isn't a martial artist.

I know there are a bunch of candidates in theory, but finding one that isn't too modern (not cuz' I'm opposed to modern Servants, but it's just harder for me to write modern Servants in general) and not too obscure either (there are probably some figures who inspired traditional folk dances, right?)... now that'll take a fair bit of research

Well, if it's allowed, sure, I don't mind. I think it's fine from what you said, but I always lean towards "better safe than sorry".
Don't know if this'll help for you and those having a hard time (or if this is allowed... Some styles you could try (that have old figures i.e. died before or during the 20th century) are:
Tap dance
Ballet
Contemporary/modern dance
Ballroom (okay this one is more umbrella term of dance styles but it should help with searching for those who made an impact on it/spread its popularity)
Tango
Waltz
Flamenco
Salsa
Jazz

Also there's a certain Japanese goddess and the ceremonial dance she inspired that's a very obvious candidate for this.
Hint: her dance helped the sun come back.

Why is everyone saying fyuck? You do realize we have a great Daedalus sheet years back who's basically the Disco king because he canonically made the first dancefloor. If Daedalus of all people would probably qualify for this prompt, surely the creative minds here can come up with candidates.
Meanwhile, I have at least one person who actually works for this, but I don't see him winning any grand awards.

I don't know if you're talking about the Unknown Soldiers I made, but I'll just arrogantly assume you are. If someone more creative than me can rewrite that concept to fit with this contest I'll give them my 1-, 2- and 3-point vote by default.
Also a reminder that anthropomorphic personifications of cities and countries now canonically qualify as Servants, if you think you can find a way to shoehorn them into this prompt.
